The job description
a typical day in resort
As one of our chefs you would be responsible for preparing nutritious meals groups numbering between 40 and 100 people at breakfast and dinner. For larger groups you would be assigned an Assistant Chef and therefore prior experience of supervising staff is desirable. Groups generally arrive on Monday and depart on Friday, with just a small number of staff members remaining on the weekends, we try to ensure that Chefs receive at least one day off a week (Saturday).
Menu’s are generally fairly simple and meals are served “camp-style” but chefs are expected to bring creativity and understanding of children's food likes and dislikes to the operation.
Chefs typically begin their day at 07:00 to prepare for the daily breakfast service. Breakfast is served between 08:00-09:00, during breakfast our chefs prepare a simple “hot option” such as French Toast, Pancakes or similar and also prepare a picnic buffet for the clients to take with them (Co-ordinating with the service staff and restocking as required).
After breakfast service is finished there is a short meeting so that domestic staff and kitchen staff can exchange any important information, after which our Chefs prepare “Gouter” (A snack for when the clients return from the mountain) and clean down the kitchen.
Once the morning duties are completed our Chefs generally have free time (between 12:00 and 16:00) so that they may go out and enjoy the mountains.
Dinner preparations begin at around 16:00-16:30, our Chefs provide clients with a 3 course meal (Soup, Main Meal & Desert) served alongside an appealing salad bar (Restocking as required). Dinner service begins at 18:30 and Chefs should expect to finish around 21:00 once the kitchen is cleaned and any preparation for the following morning has been completed.
